Buffalo Chicken Sandwich

Ingredients

Buffalo Chicken:

4 tablespoons butter

1/2 cup hot sauce, such as Frank's Red Hot

1 tablespoon chili powder 

1 rotisserie chicken, meat pulled from the bones and skin discarded

Blue Cheese Dressing:

2 cups sour cream

2/3 cup crumbled blue cheese

1/4 cup chopped green onion 

1 tablespoon garlic salt 

Dash black pepper 

8 hamburger buns 

8 small handfuls leaf lettuce 

Directions

  1. Make the buffalo chicken: Melt the butter in a saucepan over medium high heat. Add the hot sauce and chili powder and stir. Add the pulled chicken, toss together, and cook until heated through.
  2. Make the blue cheese dressing: Combine the sour cream, blue cheese, green onion, garlic salt and black pepper in a bowl and mix well.
  3. Toast the hamburger buns and and slather with the blue cheese dressing. Make sandwiches on the buns with the lettuce and buffalo chicken.

This is a home run! Yummy, fast and easy, impressive. It's a bit spicy but the blue cheese sauce tempers that. Really good for a quick dinner.
