1 cup all-purpose gluten-free flour, such as Bob's Red Mill
1 cup coarse ground cornmeal
2 tablespoons granulated sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
2 1/2 cups buttermilk
1/3 cup (5 1/3 tablespoons) unsalted butter, melted
3 large eggs
Nonstick cooking spray
Two 4-pound roasted chickens (good-quality rotisserie or home-cooked are both fine)
About 1 cup your favorite sweet-and-spicy BBQ sauce
Pinch of salt
2 sticks (1 cup) unsalted butter
1 1/2 cups brown sugar
3/4 cup bourbon whiskey
1 teaspoon vanilla
2 cups 1/4-inch sliced seasonal fruit, such as berries and/or apples (see Cook's Note)
8 ounces goat cheese
1/2 cup toasted pecans
You can use any fruit you like. We prefer strawberries in the winter and spring, blueberries or blackberries in the summer, and apples in the fall. Or a combination of them works great too.
