Cold Yogurt Soup with Tamarind and Mint

Ingredients

2 cups plain yogurt

1 cup vegetable broth

1 tablespoon chopped fresh mint leaves

1 tablespoon tamarind pulp*

1/4 teaspoon ground cardamom

1/4 teaspoon coriander powder

1/4 teaspoon grated ginger

1/8 teaspoon paprika

Pinch salt

Directions

  1. Whisk the yogurt, broth, mint, tamarind pulp, ground cardamom, coriander powder, grated ginger, paprika, and salt in a bowl and then place in the refrigerator for at least an hour. Serve the soup chilled.
