Corn Fritters

Ingredients

1 quart vegetable oil or canola oil, for frying

2 cups all-purpose flour 

4 tablespoon sugar 

1 tablespoon baking powder 

1/2 teaspoon salt 

2 eggs, beaten 

1 cup milk 

4 tablespoon liquid butter blend or melted butter 

1 cup canned corn kernels, drained

1/4 cup confectioner's sugar, sifted 

Directions

  1. Heat the cooking oil to approximately 350 degrees F in a medium saucepan. Sift together the flour, sugar, baking powder and salt in a large bowl. In another bowl combine the eggs, milk and butter until blended. Fold the egg mixture into the dry ingredients. Add the corn and mix to combine.
  2. Working in batches, drop the mixture by the tablespoon into the hot oil and deep fry, turning occasionally, until golden brown, about 5 minutes. Sprinkle with the powdered sugar.
