Apricot, Coconut and Almond Granola

Ingredients

2 cups sliced almonds

1 cup rolled oats 

3/4 cup unsweetened flaked coconut 

1/2 cup pine nuts 

1/2 cup raw walnuts, crushed by hand 

1/4 cup coconut oil 

1/4 cup honey 

2 tablespoons maple syrup 

1 teaspoon sea salt 

1 cup chopped dried apricots 

Yogurt and fresh fruit, for serving

Directions

  1. Preheat the oven to 275 degrees F.
  2. In a large bowl, mix together the almonds, oats, coconut, pine nuts, walnuts, coconut oil, honey, maple syrup and salt. Spread evenly on two parchment-lined baking sheets and bake for 30 minutes. Remove from the oven and mix in the apricots. Let cool.
  3. Serve over yogurt and seasonal fresh fruit.

This is hands down the best granola! I have been making this for at least 6 years now. It's easy to make and delicious. I have included this in gift baskets and it is always a favorite.
