  1. In a pitcher, steep the tea and lavender in 3 cups of hot water for about 4 minutes. Pour the brewed tea through a fine-mesh strainer. Add 1 cup of cold water to the tea. Refrigerate until chilled, at least 1 hour.
  2. For each drink, add 4 ounces of the lavender tea, 2 ounces of bourbon and a drizzle of honey to a cocktail shaker and shake vigorously for 10 seconds. Pour into a rocks glass filled with ice. Garnish with a lavender sprig. Serve immediately.
