Deep-Fried Bacon-Burger Dog Slider on a Stick

Ingredients

2 ounces ground beef

1/4 cup crumbled bacon 

1/4 cup shredded Cheddar

1 teaspoon all-purpose seasoning, such as Smokey Jon's, plus more for sprinkling

2 cups tempura mix 

1/4 cup chopped fresh chives 

1/4 cup chopped fresh parsley 

1 teaspoon garlic salt 

1 Hawaiian roll, such as King's Hawaiian, split

1/4 Angus-beef hot dog 

1 1/2 cups potato sticks (3/8-inch sticks)

Directions

Special equipment:
a bamboo skewer; a deep-fryer
  1. Preheat a deep-fryer to 350 degrees F.
  2. Mix together the ground beef, bacon, Cheddar and all-purpose seasoning in a bowl. Form into a patty.
  3. Heat a medium skillet over medium-high heat. Sear the patty on both sides and cook to medium. Transfer to a plate and allow to cool.
  4. Whisk the tempura mix and 1 1/2 cups ice water until smooth. Whisk in the chives, parsley and garlic salt.
  5. Thread the bottom half of the Hawaiian roll onto a bamboo skewer until it is 1 1/2 inches from the bottom. Add the burger, hot dog and the top of the roll to the skewer. Ladle the tempura batter over the skewered ingredients. Fry until golden brown, 3 to 4 minutes.
  6. Fry the potatoes until golden, 3 to 4 minutes. Sprinkle with all-purpose seasoning.
  7. Serve the bacon-burger dog on top of the fries.
