Special equipment:
a candy thermometer; a gelato or ice cream maker
  1. Bring a saucepan of water to a simmer. Stir together the milk, egg yolks, sugar and whipping cream in a large metal bowl. Set the bowl over the saucepan and stir until it reaches the temperature of 150 degrees F.
  2. Keep the mixture at this temperature for 30 minutes. Let it cool down until it reaches room temperature, then add the lemon zest.
  3. Pour the mixture into a prepared gelato or ice cream maker and follow the manufacturer's instructions to freeze.
