Dutch Oven Potatoes

Ingredients

1/4 pound bacon, cut into 1-inch pieces

1 small onion, chopped

2 1/2 pounds russet potatoes, peeled and cut into bite-size chunks

1/4 cup chopped parsley leaves

1 tablespoon seasoned salt

Freshly ground black pepper

1/2 cup water

2 tablespoons butter, cut into small pieces

Directions

  1. Preheat a wood fire or outdoor charcoal grill to medium heat.
  2. In a Dutch oven placed on the grill grate or directly on the embers of the fire, cook bacon until crisp. Add onions and cook until transparent, about 5 minutes.
  3. Put potatoes into a large mixing bowl. Add parsley, seasoned salt and pepper, to taste. Mix all ingredients well. Put potatoes into the Dutch oven, and add water and butter. Cook, covered, until potatoes are browned and tender, about 20 minutes. Serve warm.

Instead of a dutch oven on the grill I wrapped everything in heavy duty aluminum foil and hubby grilled the potatoes. Cooked the bacon and onion halfway thru and used vegetable broth instead of water. Spread some butter on the foil then layered the potatoes. I used yukon gold since that is what I always have on hand. Added the remaining ingredients and rolled the foil packet together tightly. Liked the smoky flavor from the bacon with the creamy potatoes and how nicely they browned on the bottom. Will make these again!
