French Onion Soup

Ingredients

10 gallons beef stock or water

15 pounds chopped onions

4 pounds chopped celery

1 pound butter

4 ounces paprika

1 bottle Worcestershire sauce

Salt

Beef base

2 ounces caramel coloring

Croutons, for serving

Shredded cheese, such as Swiss and mozzarella, for serving

Finely chopped fresh parsley, for serving

Directions

  1. In a large pot combine the stock, onions, celery, butter, paprika and Worcestershire. Cook over medium heat for 30 minutes.
  2. Add salt and beef base to taste. Add the caramel coloring as needed.
  3. Preheat the broiler.
  4. Fill a serving bowl with the soup and top with some croutons and cheese. Place under the broiler until the cheese melts and turns golden brown on top. Top with some parsley and serve.
