George Martin's Sassafras Iced Tea

Ingredients

4 cups dried sassafras root bark (see Cook's Note)

Maple sugar (see Cook's Note), for serving 

Directions

  1. Combine the sassafras and 8 cups cold water in a large pot. Bring to a boil, then turn off the heat and let steep for 10 to 15 minutes. Strain and let cool completely. Serve over ice with maple sugar for sweetness, if desired.
