As a chef I 100% approve of this recipe as did my guinea pigs who tested it out with me. I can understand why it has no reviews as there are a lot of components/steps to this dish. But! It’s worth the experimentation. The flavors are wonderful and you get just enough of the unique ingredients for it to keep your attention through the course of eating it. Nothing is too overpowering. The random salty tangy bites of goat cheese couple with the sweetness of the peaches and basil bourbon coulis are perfect together. The lemon and thyme shortbread tastes great at the bottom, maintaining its crunch still but soaking up peach juice and basil bourbon coulis. Please try this recipe! You won’t regret it.
