Harvest Pear and Apple Cobbler with Cheddar Dumplings

Ingredients

Filling:

1/2 cup sugar

2 tablespoons all-purpose flour 

1 teaspoon cinnamon 

2 large Golden Delicious apples, peeled, cored, cut into thin slices (3 cups) 

2 large, ripe Anjou pears, peeled, cored, cut into thin slices (3 cups) 

2 tablespoons apple juice or water 

1 tablespoon butter, cut into small pieces 

Dumplings:

1 cup all-purpose flour

1/4 cup sugar 

2 teaspoons baking powder 

1/4 teaspoon salt 

1 1/2 cups (6 ounces) Sargento(R) Fine Cut Shredded Sharp Cheddar Cheese 

2/3 cup milk 

1/3 cup butter, melted 

Directions

  1. Preheat the oven to 400 degrees F.
  2. For the filling: Combine the sugar, flour and cinnamon in a large bowl. Add the apples, pears and apple juice or water; mix well. Transfer the mixture to a 1 1/2-quart shallow casserole dish or an 11-by-7-inch baking dish; top with the butter pieces.
  3. For the dumplings: Combine the flour, sugar, baking powder and salt in a medium bowl. Add the cheese; mix well. Add the milk and butter; mix just until the dry ingredients are moistened. Drop the dough into 8 or 9 mounds over fruit mixture.
  4. Bake until the filling is bubbly and the dumplings are golden brown, 30 to 35 minutes. Transfer to a wire cooling rack; let stand at least 20 minutes before serving. Serve warm.
