Lemon Dijon Market Salad

Ingredients

Dressing:

1/2 cup olive oil

1/4 cup fresh lemon juice

1 teaspoon Dijon mustard

1 tablespoon finely chopped shallots

1 teaspoon honey

Generous pinch salt

Generous pinch freshly ground pepper

Salad:

1 head Bibb lettuce, leaves roughly torn

4 to 5 radishes, thinly sliced

1/2 cup candied walnuts

1/4 cup crumbled goat cheese

1 tablespoon chopped fresh chives

Directions

  1. Add the oil, lemon juice, Dijon mustard, shallots, honey, salt and pepper in a jar and shake to combine. Place the lettuce, radishes and candied walnuts in bowl. Add enough dressing to lightly coat the leaves. Divide among plates and sprinkle with the goat cheese and chives.
