Hungry Hungry Hash

Ingredients

1 to 2 teaspoons butter, plus 1/2 tablespoon for egg

1 to 2 teaspoons lard 

1 cup grated sweet potato 

1/2 cup chopped broccoli

1/4 cup chopped onion

1/4 cup chopped green pepper 

Salt and pepper

1/2 precooked andouille sausage link, sliced 

1 egg 

Directions

  1. Melt the butter and lard on a griddle or in a large saute pan over medium-high heat. Add the sweet potato, broccoli, onion and green pepper and sprinkle with salt and pepper. 
  2. Cook the vegetables until crispy, 5 to 10 minutes, tossing them around a bit as they cook.
  3. Cook the sausage slices on another part of the griddle or in another pan over medium heat until browned, about 5 minutes. Add to the hash. Melt the remaining 1/2 tablespoon of butter on the griddle or in the sausage pan over medium heat and fry the egg in the butter. Serve the egg on the hash.
