1 (14.5 ounce) can diced tomatoes
1 tablespoon fresh thyme leaves
1 teaspoon torn fresh rosemary leaves 2 cups low-sodium chicken broth or stock
3 cans (15.5-ounce) cannellini beans, drained and rinsed or 8 ounces dried cannellini beans, cooked
2 pieces duck confit leg and thigh, optional, but suggested
1 cup bread crumbs
3 tablespoons butter, melted
3 tablespoons chopped fresh flat-leaf parsley

Made this to cheer husband up when a trip to France got cancelled. Now have made it as Christmas dinner 2 years in a row. When I travelled to France this year, trying real cassoulet was my one request for food (tho I never did find it). Anyway, It’s a winner! I use chicken instead of duck confit (can never find duck confit) and 1 cup white wine 1 cup stock, also no zucchini. This time I added in some Cajun sausage. Otherwise I follow it closely and it’s delish!
