Ingredients

Lemon Cream:

1 cup heavy cream

1/4 cup confectioners' sugar 

1/2 teaspoon vanilla extract

1 lemon, zested 

1 cup sour cream 

Oatmeal Berry Cobbler:

2 cups old-fashioned oats

1/3 cup packed light brown sugar 

1 teaspoon baking powder 

1 teaspoon ground cinnamon 

1/4 teaspoon kosher salt 

3 cups mixed berries

2 large eggs 

2 cups buttermilk 

3 tablespoons unsalted butter, melted 

3 tablespoons maple syrup 

2 teaspoons vanilla extract 

1/2 cup pecans, chopped 

Directions

  1. For the lemon cream: Combine the cream, confectioners' sugar, vanilla and lemon zest and beat to soft peaks with an electric mixer on medium-high speed. Add the sour cream and beat until smooth and stiff peaks. Refrigerate until ready to serve, up to 1 hour.
  2. For the oatmeal berry cobbler: Preheat the oven to 375 degrees F.
  3. In an 8-by-8-inch baking dish, mix together by hand the oats, brown sugar, baking powder, cinnamon and salt. Scatter half the berries evenly over the mixture.
  4. In a mixing bowl, whisk together the eggs, buttermilk, butter, maple syrup and vanilla. Pour over the berries and dry ingredients. Finish by scattering the remaining berries on top, along with the chopped pecans.
  5. Bake until set in the middle, about 20 minutes. Serve with the lemon cream.

This is really good and all four of my kids loved it, BUT I find it better to kind of stir the buttermilk mixture into the oats otherwise it didn't penetrate to the bottom. It also took way longer than 20min for it to set up so allow some extra baking time. Overall, a very simple tasty recipe.
