10 ounces cooked prime rib, cubed
1 cup diced white onion
1/2 cup diced celery
Freshly ground black pepper
1/2 teaspoon chopped fresh Italian parsley
1/2 teaspoon chopped fresh rosemary
1/4 cup ketchup
1/4 cup cold mashed potatoes
1/4 teaspoon hot sauce, such as Tabasco
1 tablespoon vegetable oil
2 fried eggs
1 teaspoons chopped fresh chives
Substitute the prime rib with practically any leftover meat such as short ribs, flank steak, fillet, pork roast, roasted chicken or even turkey. If you don't have leftover mashed potatoes, cook 1 1/4 cups diced potatoes and, after draining them, smash half of the potatoes with the back of a spoon while they are still warm.
