Fruit and Nut Salad with French Dressing

Ingredients

Dressing:

1/2 small onion, grated

1/4 cup ketchup 

1/4 cup red wine vinegar  

3 tablespoons honey 

1 teaspoon Worcestershire sauce  

1/2 teaspoon paprika

1/2 cup extra-virgin olive oil  

Salt and pepper 

Salt and pepper

Salad:

8 cups mixed baby lettuce

1 cup sliced English cucumbers

1 cup sliced grape tomatoes  

1/3 cup dried cranberries 

1/4 cup pistachios, toasted 

1/4 cup chopped walnuts, toasted  

Directions

  1. For the dressing: In a medium bowl, whisk together the onion, ketchup, vinegar, honey, Worcestershire and paprika. Slowly drizzle in the oil while whisking. Season with salt and pepper.
  2. For the salad: In a large salad bowl, combine the lettuce, cucumbers, tomatoes, cranberries, pistachios and walnuts. Toss well. Serve with the dressing on the side.
