3 tablespoons unsalted butter (1 tablespoon soft and 2 tablespoons melted), plus extra for brushing muffins
1/2 small onion, finely chopped
1 1/2 cups all-purpose flour
1/2 cup coarse cornmeal
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon kosher salt, plus more for sprinkling
1/2 teaspoon baking soda
1/4 teaspoon coarsely ground black pepper
3/4 cup milk
1/4 cup sour cream
2 large eggs
1 cup shredded sharp Cheddar (about 2 ounces)
1/4 cup finely grated Parmesan, plus extra for garnish
1/4 pound ham, finely chopped (about 2/3 cup)
1 teaspoon thyme leaves, plus extra for garnish

These are delicious! Instead of adding sautéed diced onion, I added sliced green onions and chives straight to the batter. Also added a little garlic powder and onion powder, as well as cayenne pepper and dry mustard. Halfway through the baking process, I brushed the tops with melted butter and added salt, but I think the salt was unnecessary, especially with the salty grated parmesan cheese on top. I'll be making these again!
