Smoked Tomato Relish

Ingredients

2 tablespoons oil

1 onion, finely chopped

1 green pepper, diced

2 cloves garlic, crushed

One 8-centimeter (3-inch) piece fresh ginger, chopped or grated

70 grams (2 1/2 ounces) chorizo sausage, diced

1 large aubergine (eggplant), sprinkled with salt, wiped and finely chopped

2 tablespoons smoked paprika

10 grams (2 teaspoons) tomato paste

1 tin (can) peeled and chopped tomatoes

375 milliliters (1 2/3 cup) chicken stock

Directions

  1. Heat the oil in a large saucepan and saute the onion and green pepper for 3 minutes.
  2. Add the garlic and ginger and stir for a minute. Add the chorizo sausage, aubergine and paprika and saute over high heat for 4 minutes.
  3. Lower the heat to medium and cook until the aubergine is soft, about 3 minutes. Add the tomato paste and stir well.
  4. Add the chopped tomatoes and stir. Pour in the stock, bring to the boil and simmer uncovered or half-covered until thickened, about 10 minutes.
