Ingredients

6 corn on the cobs

2 tablespoons smoked Maldon salt

2 tablespoons chile flakes

2 tablespoons dried mixed herbs

2 tablespoons smoked paprika

1/2 tablespoon cayenne pepper

Butter, to serve

Directions

  1. Chop the corn in half. Soak the corn in a bowl of cold water until ready to cook ¿ this will prevent it from burning on the grill.
  2. Mix together the spice mix ingredients and set to one side. Grill the corn until cooked, 10 minutes or so, making sure you turn it every few minutes. Once cooked and nicely charred, remove from the grill. Brush with butter and sprinkle generously with the spice mix.
