Skillet Okra

Ingredients

5 ounces bacon (4 to 5 strips), cut into 1/4-inch pieces

1 large Vidalia or other sweet onion, diced 

1 pound okra, trimmed and cut into 1/2-inch-thick rounds 

1 1/2 teaspoons kosher salt 

1/2 teaspoon freshly ground black pepper 

2 large tomatoes, cored, seeded, and cut into 1/2-inch pieces 

Directions

  1. In a large cast-iron skillet, cook the bacon over medium heat for about 8 minutes, until crispy. Use a slotted spoon to transfer the bacon to a plate lined with paper towels; set aside.
  2. Add the onions to the bacon drippings in the skillet and cook, stirring often, until caramelized, about 5 minutes, then remove and set aside along with the bacon.
  3. Add the okra to the skillet along with the salt and pepper. Cook for 10 to 12 minutes, stirring once gently, until the okra is tender.
  4. Add the bacon, onions, and tomatoes and cook for an additional 2 minutes. Serve warm.

This is a great recipe for broading your horizons with. I had sausage instead and cooked this recipe following the rest of the directions. This recipe can be added to. Like green peppers and sauteed with onions. And mushrooms, too. I added Basil and oregano. Made the recipe stand out. If you like hot, add jalapenos. This is a very delicious recipe. Thank you for sharing.
