Sonny Young's Chocolate Chip Pancakes

Ingredients

6 cups milk

1 cup quick oats 

1/2 cup canola oil 

6 cups all-purpose flour 

2 tablespoons baking powder 

1 teaspoon salt 

3 eggs 

Nonstick cooking spray

2 cups chocolate chips 

Maple syrup

Directions

  1. In the bowl of a stand mixer fitted with a whisk attachment, mix together the milk, oats and canola oil until fully incorporated. Then add the flour, baking powder, salt and eggs, and mix again.
  2. Heat a griddle to medium heat and coat with the nonstick spray. Ladle about 1/4 cup of the batter onto the skillet to make a pancake. Repeat, being sure to space each pancake out on the griddle. Sprinkle a handful of chocolate chips onto each pancake and press the chips into the batter with a fork.
  3. Cook, until tops begin to bubble, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Transfer to a platter and cover loosely with foil to keep warm. Repeat the process until you run out of batter.
  4. When ready to eat, warm the maple syrup and serve.
