Soused Herrings

Ingredients

4 herrings, cleaned, boned and heads and tails removed

1 small onion, sliced

1 tablespoon mixed pickling sauce

2 bay leaves

Salt and freshly ground black pepper

1/4 pint (1/2 cup) dry white wine

1/4 pint (1/2 cup) good wine vinegar

Directions

  1. Preheat the oven to 300 degrees F.
  2. Lay the herrings in a fireproof dish, cover with the sliced onion, sprinkle with the pickling spice and add bay leaves, salt and pepper. Mix the wine and wine vinegar and pour over. Cook in the oven for about 1 1/2 hours. Allow to get cold before serving.
