Parmesan Peas

Ingredients

2 tablespoons unsalted butter

3 small shallots, sliced

Kosher salt and freshly ground black pepper

One 14-ounce bag frozen peas, thawed

2 tablespoons freshly squeezed lemon juice

1/4 cup grated Parmesan

Directions

  1. Melt the butter in a medium skillet over medium heat. Add the shallots and a pinch of salt and cook until the shallots are soft and translucent, about 4 minutes.
  2. Stir in the peas and 1/2 teaspoon salt and cook until the peas are soft but still bright green, 2 to 3 minutes. Add the lemon juice and toss. Remove from the heat and stir in the Parmesan and a generous pinch of black pepper. Serve hot.
