Two Smart Cookies' Peanut Butter Swirled Brownie

Ingredients

Peanut Butter Topping:

3/4 cup creamy peanut butter

1/2 to 3/4 cup powdered sugar

4 tablespoons unsalted butter, melted

Peanut Butter Swirled Brownie:

2 cups sugar

1 cup unsalted butter, melted, plus more for greasing the pan

1 cup baking cocoa

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1 tablespoon pure vanilla extract

2/3 teaspoon baking powder

2/3 teaspoon salt

4 eggs

Directions

  1. For the topping: Mix together the peanut butter, sugar and butter in a bowl.
  2. For the brownies: Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking pan with butter.
  3. Mix together the sugar, butter, cocoa, flours, vanilla, baking powder, salt and eggs with an electric mixer or by hand until smooth. Pour into the greased pan. Pour the peanut butter topping in three vertical lines over the brownies. Draw a butter knife horizontally through the lines, creating a marbling effect. Bake the brownies until a toothpick inserted in the center comes out clean, 35 to 45 minutes.
