1 cup finely chopped red and yellow bell peppers
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
2/3 cup fat-free mayonnaise
1 tablespoon plus 1 teaspoon honey mustard
2 teaspoons sweet relish
1/8 teaspoon salt
1/8 teaspoon black pepper

A nice cool tuna salad that I enjoyed on one of our scorching days. I used 2 pouches of lemon pepper tuna and cut back to about 3/4 cup of peppers. The dressing was ok but thinned out quickly and wasnt real fond of the honey mustard flavor with the relish. I will make this again with adjustments to the dressing.
